Raw Chocolate Caramel Slice

Raw Chocolate Caramel Slice with no guilt? Is that possible?! This slice is packed with protein, good essential fatty acids, antioxidants and natural sugars. An excellent energy source before a workout or with Christmas coming up it’s a great treat to have around for family and friends.

Base:
3/4 cup raw pecan nuts
3/4 cup raw walnuts
2 tbsp coconut flour
1/2 cup coconut
1/4 cup coconut oil (melted)
6 dates

Filling:
1 1/2 cup raw cashews (soaked for at least 4 hours)
3 heaped tbsp of Pure Edge Vanilla Pure Native WPI
10 dates
2 tbsp macca powder
1/4 cup coconut oil (melted)
pinch of himalayan rock salt

Topping:
2 tbsp raw cacao powder
1/4 cup coconut oil
2 tbsp rice malt syrup

Method

BASE:
– Line a baking tray with baking paper
– Process the dates, walnuts, pecans & coconut in a food processor
– Add the coconut oil & blend until moist and crumbly
– Press base into the baking tray with your fingers

FILLING:
Blend the caramel ingredients together and spread evenly over the base
Place in freezer for 20 minutes

CHOC TOPPING:
Over a cook top, melt the coconut oil and stir in the cacao powder and rice malt syrup then pour over caramel layer. Pop back in the fridge to set.

Makes 10 – 15 slices. Can also be served up frozen for a great summer treat
